Authentic Chicken Curry with Indian Flavor Co’s Rojana Masala

Ingredients

For Marination:

  • 250g Chicken (Leg or Boneless Breast, Cut into 1-2 inch pieces)
  • ½ tsp Salt
  • ½ tsp Red Chili Powder
  • 1 tsp Lemon Juice
  • ½ tsp Garlic Paste
  • ½ tsp Ginger Paste

For Cooking:

  • 1 tbsp Edible Oil
  • 1 tsp Cumin Seeds (Zeera)
  • 2 Cloves
  • 1 Bay Leaf
  • 1-inch Cinnamon Stick
  • 1 Big Cardamom (Black Cardamom)
  • 2 Small Cardamoms (Green Cardamom)

Spices & Flavor Enhancers:

  • 3 tbsp Rojana Masala
  • 1 pinch Turmeric Powder (Haldi)
  • 1 pinch Red Chili Powder
  • 1 pinch Kashmiri Red Chili Powder
  • ½ tsp Dhania Powder (Coriander Powder)
  • 1 tsp Chicken Masala

Final Touch:

  • 1.5 cups Boiling Water (Adjust as needed for consistency)
  • 1 tsp Garam Masala
  • 1 tsp Kasuri Methi (Dry Fenugreek Leaves)
  • Fresh Coriander Leaves (Chopped)

Method

1. Marinate the Chicken:

  • In a bowl, mix chicken pieces with salt, red chili powder, lemon juice, garlic paste, and ginger paste.
  • Let it rest for 1-2 hours for deep flavor infusion.

2. Sauté the Chicken:

  • Heat 1 tbsp oil in a pan.
  • Add marinated chicken and sauté for 2-3 minutes on high flame until slightly golden.
  • Remove the chicken and set it aside.

3. Prepare the Masala Base:

  • In the same pan, add remaining oil (if needed).
  • Add whole spices (cumin seeds, cloves, bay leaf, cinnamon, black & green cardamom).
  • Let them crackle and release their aroma.

4. Cook the Masala:

  • Add Rojana Masala, turmeric powder, red chili powder, Kashmiri red chili powder, coriander powder, and chicken masala.
  • Cook for 2-3 minutes, stirring continuously.

5. Add the Chicken:

  • Put the sautéed chicken back into the pan.
  • Mix well with the masala and cook for 1-2 minutes to absorb flavors.

6. Simmer in Water:

  • Add boiling water and let it cook on medium flame until the chicken is tender and flavors are well blended.

7. Final Touch & Garnish:

  • Sprinkle garam masala, kasuri methi, and fresh coriander leaves for a rich aroma.
  • Let it simmer for a minute before turning off the heat.

8. Serve Hot:

  • Garnish with extra coriander and serve with naan, roti, or jeera rice.
